Stuffed Poblanos

You can easily add rice, riced cauliflower, quinoa, or your favorites to this dish.

But for this particular dish...

1) I cooked a medium sweet potato in the microwave 3-4 minutes.

2) Sliced the poblanos in half and took out the seeds. Cook on a baking sheet at 350 degrees for about 5-10 minutes while preparing the rest.

3) Remove the skin from the sweet potato (optional) and cut into cubes

4) Mixed one can of black beans, one can of corn, cubed sweet potato, cilantro (I like a lot-- about 1/2 cup chopped), and nopales (you can use nopales from the jar-- however, if you get it fresh, you will want to boil it first) 

5) Fill the peppers with the mixture and cook for 30-40 minutes

6) Top with green salsa and guacamole

Add additional cilantro to garnish.

I like the sweetness of the sweet potato, especially if you are making (or buying) hot green salsa or guacamole. Therefore, you might want to add an additional sweet potato.

Depending on the size of your poblanos, this fills 2-4 halved chiles. 

It is DELICIOUS and definitely worth the 30-40 minute baking time!
